Our adventure begins at 11:30 am in the Town Hall Square, where we will be greeted by our knowledgeable guide. Prepare to explore the historic center of Bolzano as we seek out the authentic tastes of traditional cuisine. Grab your forks, and let’s embark on this flavorful quest!

Throughout the journey, we will make at least four stops at local eateries and bars that are often hidden gems, cherished by area residents. In these havens of flavor and heritage, we will savor the specialties that define the culinary landscape of Bolzano.

Alongside popular pretzels and classic apple strudel, we will delve into the distinctive canederli, also known as knödel—savory dumplings made from stale bread and frequently garnished with cheese. Additionally, we will have the opportunity to sample bauernschinken, a deliciously seasoned ham, and laugenbrot, a regional bread prepared by soaking in a bicarbonate solution prior to baking.

To complement these robust flavors, we will indulge in exceptional South Tyrolean beer, which pairs perfectly with the diverse profiles of local dishes, offering options that range from subtle to richly aromatic.
