Journey to Estancia Vigil from Buenos Aires

Your day begins with a pickup from your central Buenos Aires hotel, as we head towards the serene outskirts of the city. Our destination is the Los Cardales area, conveniently located just under an hour’s drive from the capital and across from the Parque Nacional Ciervo de los Pantanos.

Upon arrival, we'll discover the Mercado Estancia Vigil, an exclusive wine market designed with the charm of traditional rural stores. The culinary journey awaits, shaped by the specific option selected at the time of reservation:

During the booking stage, choose between the following two experiences:

5-Hour Experience

Opting for this shorter excursion offers an engaging experience, complete with a guided tasting tour throughout the vineyards and winery. Upon arrival, a glass of wine from the renowned Catena Zapata Winery will greet you, celebrated globally for its excellence.

Guided by a sommelier, explore the vineyards, home to over 3,000 vines sourced directly from Mendoza. This walking tour includes complimentary tapas and additional wine servings in the Patio and Winery areas, along with insightful narratives about the estate's history.

Following the tour, indulge in an exquisite three-course paired lunch. The cuisine exemplifies the "Kilometer Zero" philosophy, featuring fresh, seasonal ingredients from their garden and local providers to enhance flavor. The menu comprises your choice of the following:

Starters

  • Empanada of slow-cooked osso buco with a romesco sauce made of smoked peppers and extra virgin olive oil.
  • Tartare of seasonal mushrooms with Worcestershire and Dijon mustard emulsion, mushroom powder, and dehydrated black olives.
  • Carpaccio of Atlantic prawn with olive and lemon emulsion, corn, and roasted bell pepper coulis.

Main Courses

  • Patagonian trout with citrus cappellacci served in a vegetable and miso consommé.
  • Perfectly cooked ribeye steak accompanied by crispy potatoes, a panko-breaded egg, jalapeño mayonnaise, and its own cooking juices.
  • Crispy eggplant served with sautéed seasonal vegetables, soy sauce, teriyaki, and toasted sesame seeds.

Desserts

  • Banana brûlée with coconut ice cream, toasted flakes, lime cream, wasabi custard, and fig leaf powder.
  • Zabayon with pear, Cabernet Franc, sesame, and charcoal.

This lunch includes a wine pairing featuring selections from the distinguished Saint Felicien by Catena Zapata collection, along with water and Nespresso coffee. Afterward, we'll make our way back to your hotel in Buenos Aires.

8-Hour Experience

After being greeted with a glass of wine, delve into the rich history of Estancia Vigil, its philosophy, and the origin of its uniquely selected vines from the province of Mendoza.

Next, enjoy a guided exploration of the estate, visiting the fireplace, patio, and vineyards. Following this, participate in a wine tasting of three distinct varieties curated by Alejandro Vigil, a renowned figure in Argentine winemaking. During this tasting, appreciate the diverse profiles of Argentine Malbec through the following selections or similar:

  • DV Catena Malbec La Rioja: a floral and elegant wine marked by notable minerality, thriving at an altitude of 4,921 ft (1,500 m).
  • DV Catena Malbec Salta: an intense and spicy wine boasting excellent natural acidity from vines cultivated at 6,561 ft (2,000 m).
  • DV Catena Malbec Mendoza: harvested at 3,116 ft (950 m), this wine offers a fruity and balanced profile, embodying classic style.

Accompanying the tasting is a selection of regional cheeses, artisanal charcuterie, and homemade bread. To round out the experience, savor a complete three-course lunch where you can choose from the following local delicacies:

Starters

  • Osobuco empanada with tartar sauce
  • Humita empanada with green sauce (vegan option)
  • Beef carpaccio with herb salt, pejerrey vitel tonné, quail eggs, homemade mustard, and caper leaves
  • Swiss chard and beet fritters accompanied by beet hummus, pickles, and mixed greens
  • 63°C egg with onion foam and ash, roasted pepper emulsion, and potato (vegetarian option)

Main Courses

  • Short ribs served with creamy white beans, asparagus, celery powder, and meat sauce
  • Trout with emulsion, cauliflower couscous, and kale (vegetarian option)
  • Roasted eggplant with cashew cream, gremolata, teriyaki, and black beans (vegan option)
  • Beef fillet served with creamy potatoes, mushroom demi-glace, and cured yolk emulsion

Desserts

  • Cocoa profiterole filled with hazelnuts and caramelized banana, paired with orange ice cream and vanilla sauce
  • Mandarin curd with financier, lemon ice cream, mascarpone, and ginger
  • Apple ice cream with textures, cardamom custard, and vanilla
  • Dulce de leche with chocolate ganache, ice cream, and vanilla foam

This lunch also includes a glass of El Enemigo wine thoughtfully paired with each dish. Subsequently, we'll return you to your hotel.
