Tour Details

We will convene at the entrance of the Olivos de las Ánimas estate, located in the scenic Punta del Este countryside. Are you prepared to uncover one of the region's finest treasures?

The journey begins with a guided stroll through the olive groves, where you will discover the various cultivated olive species along with their agricultural traits. The discussion will include insights on both traditional farming techniques and organic methods, highlighting the influence of elements like soil quality, sun exposure, and the proximity to the Atlantic Ocean on olive quality.

Our next stop will be the mill, where the technical operations unfold. Here, you will witness the meticulous steps involved in producing extra virgin olive oil: starting from the arrival and cleaning of olives, progressing through milling, mixing, and concluding with cold mechanical extraction.

Key topics such as traceability, acidity, and quality metrics will be covered. Additionally, you will learn about the estate's sustainable farming model, including initiatives for repurposing organic waste to minimize environmental impact and create a closed production loop.

Following the mill visit, we will transition to the estate house for a guided tasting session featuring 2 or 3 different oils. Here, you'll learn to distinguish flavors such as fruitiness and bitterness, complemented by olives and freshly made focaccia.

The experience culminates with a delectable lunch comprising ribeye steak, seasonal vegetables, a glass of wine, and refreshing soft drinks, concluding with a traditional dessert of cheese paired with quince paste called Martín Fierro. Bon appétit!
