The mill, known as Mas de Bories, derives its name from thebories—unique stone huts that exemplify the remarkable 19th-century agricultural architecture of Provence. These striking structures are nestled among the vast olive orchards.

During our visit to the Mas des Bories olive grove, you'll discover what it means to experience a traditional olive plantation in Provence. We will delve into the methods employed to cultivate olives and the intricacies of the olive oil production process.

You will learn that each type of olive is harvested at its peak ripeness and processed separately in a traditional mill utilizing cold extraction techniques. This meticulous process produces single-variety extra virgin oils, which are celebrated as a hallmark of Mediterranean gastronomy.
