Chocolate Workshop in Cusco
Description
Experience the craftsmanship of chocolate making with an engaging chocolate workshop in Cusco. You will create delightful treats using 100% organic cocoa sourced from the Quillabamba community, ensuring a unique and flavorful experience!
Workshop Overview
We will meet at the scheduled time on Pasñapakana street in San Blas to kick off the chocolate workshop in Cusco. Throughout this session, participants will learn to craft Belgian-style pralines and mendiants, utilizing artisanal organic cocoa from Quillabamba. Let’s get started!
After introductions, we will delve into the fascinating history and culture surrounding chocolate. Then, we will roll up our sleeves and dive into creating pralines. Our first step involves preparing the couverture and allowing it to set in molds. This type differs from standard chocolate thanks to its added cocoa butter. Following this, we will whip up the filling, known as ganache, by mixing chocolate with heavy cream.
Next, our focus shifts to crafting the mendiants, which are chocolate rounds adorned with nuts and dried fruits harvested from the Sacred Valley of the Incas. These fresh, local ingredients will enhance each bite with exceptional flavor.
Once the fillings are complete, we’ll return to the pralines for decoration, using a variety of organic jams and nuts sourced locally. While the pralines cool and firm, we will also guide you in preparing a rich hot chocolate.
By the end of the session, you will take home about 30 pralines and mendiants, beautifully packaged in a personalized box, serving as a memorable keepsake from this 2.5-hour workshop.
