The Origen show is structured into 4 distinct acts:

• Genesis: A Guanche shaman narrates the "Origin Myth of the Fortunate Islands", exploring the elemental powers of earth, fire, water, and air as the architects of this remarkable archipelago.
• Atlantis: Drawing from ancient texts by Plato, the concept of the Atlantean civilization suggests that the remnants of this lost land are present in the form of the Canary Islands.
• The Fortunate Islands: Emerging from the vestiges of Atlantis, the Guanches, the original inhabitants of the Canary Islands, form a new society. Their cultural heritage merges with that of the Spanish conquerors, resulting in a rich legacy.
• Return to the Present: A journey through time culminates in a celebration of modern-day Canarian carnival and drag culture, concluding the performance on a vibrant note.

Tasting Menu

The tasting menu crafted by Chef Andrés Rodríguez features 4 thoughtfully prepared dishes:

• Aperitif: Choose from options like a spirulina and plantain shot, Gran Canaria cheese with seasonal fruit jam and almagrote, crispy pork belly with sweet potato purée, grilled octopus with avocado mojo, Teror-style black pudding with almonds, or cornmeal 'pan de puño'.
• Essentials of Creation: Atlantic seabass tiradito with aguachile, black olive soil, and subtle cilantro notes.
• Colonisation: Pressed Canarian pork cooked in its own juices, served with toasted cornmeal and wrinkled potatoes accompanied by green mojo.
• Origins: Pannacotta made from goat cheese, toffee, and gofio crumble finished with mini Indian fig meringues.
